Today I am going to show you a recipe, which I consider very interesting because it is very natural, without any added sugar, and also provides energy. Banana Bread, it’s important at this time than we criticize the use of added sugars in food.
I do not mean to tell you that this bread is miraculous for athletes, nor that it will help us to achieve success, it is simply a natural bread, homemade and that certainly surely it will not make hurt to us.
- 3 eggs
- 3 very ripe bananas
- 125 gr of oatmeal
- 50 gr of whole wheat flour
- 4-5 dates
- 1 sachet of yeast
- 1 pinch of salt
- Dried fruits (raisins, dried apricots, …)
- Nuts, almonds,….
I am going to warn you that even if I indicate these ingredients to you, the quantities can be increased, by a simple rule of three. For example I used double everything, less yeast, I think an envelope is more than good.
So let’s prepare all the ingredients. For oatmeal, I have simply used oat flakes, which once passed by any kitchen robot or shredded in any way until getting a fine powder, they are converted into oatmeal. In my case I used the Thermomix with 4 strokes of turbo.
Then we beat the eggs in a bowl and reserve it. To beat the eggs, we can use any traditional method, or also the Thermomix if we are a little more lazy.
Then mix the dates, the banana and the raisins, and grind them all together, until mold a homogeneous mass, in my case it took 20 seconds of Thermomix, at speed 3-4, but if you do not like the dough, You can program a little more time and a speed, for example to 5, and that’s it.
Then we reserve the mass, as we will use it in the next step.
Next, mix the flours(oatmeal and whole wheat flour), then add this mixture to the previously beaten eggs. It is wrapped gently (I at speed 2-3 of Thermomix) and to the obtained result we add the previous mass of the bananas, dates and raisins. In addition we also pour the essence of vanilla, salt and yeast. We unite everything until it is even. I to get that uniformity, I put the Thermomix at speed 3 for 10 sg, and then another 10 seconds at speed 4
Now finally we lined the mold with paper of oven and add the mass that with so much attention we have been preparing, and it is time to improvise. To this mass obtained, we add nuts, almonds,.. I in my case also added pure cocoa, but you can improvise with whatever you want. And wrap it carefully to obtain the final result, which you will put in the oven previously heated at 180º – 200º for 45 minutes to 1 hour. Although you know that then comes the time to control with a toothpick when the dough is.
The resulting banana bread can be eaten for up to 5 days. Or if we can not, we can freeze it in pieces that we will take out the night before to thaw, or as an emergency, we can defrost them in the microwave.
